DNA testing for fraud of beef breed and origin
Expensive Japanese beef has often been a problem with mislabeling. Correct labeling of food is important, and it was necessary to develop technology to detect mislabeling. We have succeeded in developing DNA technology to identify the breed and origin of beef through genome analysis. Currently, it is possible to determine the breed and origin of most of the beef sold in Japan, and these technologies are being used for market inspection. I believe that such technologies will reduce the mislabeling of beef and dispel consumer mistrust. In this class, I will explain the social background of mislabeling, the origins of Japanese beef, and research on developing DNA methodology to identify the breed and origin of beef.
